Halloumi and eggs, village bread, olives and a sweet coffee — the unhurried first meal that sets the island's pace.
Cyprus does not do breakfast on the move. The morning table here is a small ceremony — savoury, generous and designed to be lingered over — and it tells you a great deal about how the island prefers to live.
At its heart is halloumi, pan-fried or grilled, often with eggs. Around it gather village bread still warm, olives and tomatoes, cucumber, boiled eggs, honey and preserves, perhaps anari cheese or a slice of bougatsa, and a small, strong Cyprus coffee to finish. It is closer to a light meze than to toast on the run.
The point is the pace. A proper Cypriot breakfast is taken sitting down, in company or with a newspaper, in a village kafenion or a seafront café where no one is hurrying you. Do it once on a slow morning and you will understand why the day starts gently here.
